I was inspired by an article on the Men's Health website, "Shop Once, Eat for a Week" (register for free to read the full, downloadable article in PDF form). I should mention this is an unsolicited reference. I don't have anything to do with the magazine, other than subscribing to their sister magazine, Women's Health.
I was already planning on grocery shopping today and had been feeling a little stagnant, so figured I'd give it a shot. I also have 1.3 pounds to go until I hit the 50 lb. loss mark, so a little shakeup is good. I'm not following it to a T (for one, I'm a woman with lower calorie needs than your average man), but did use it for some shopping inspiration and menu planning, beginning with dinner this evening.
Breakfast:
Peanut butter (the natural kind) and sugar-free strawberry jam on high fiber, whole wheat bread
Lunch:
Glucerna shake
Afternoon snack:
Sugar-free, fat-free yogurt, a pear, and whole grain crackers
Dinner:
Chicken fajitas with onion, orange peppers and crimini mushrooms on white corn tortillas (2), topped with fresh tomatoes and plain, Greek yogurt
Vegetarian refried beans
Dessert:
Pineapple coconut yogurt (Light and Fit) with sliced banana
I went too low on the veggies today, but at least got some more fruit in before bedtime.
