Enchilada

I wanted comfort food, so went for a rustic casserole preparation. The layers of moderately spicy tomato sauce, corn torilla, olives, gooey cheese (low fat cheddar), black beans and leftover pork loin (poached in a flavorful, oniony liquid, so it stayed tender when baked into the casserole). It was lovely. I'd intended to put corn in it, then top with plain Greek yogurt when serving, but I forgot both. It was perfectly good without them. We ate a nice mix of steamed veggies on the side for a nicely balanced meal.
